Smashed avocado and poached eggs

Ingredients

1 slice of wholemeal bread

1 medium organic free-range egg

1/2 ripe Avocado

A handful of Kale

A dash of Chilli flakes

A drop of Vinegar

Method

1. Gently crack an egg into a cup or bowl

2. Bring a pan of water to simmer

3. Add a drop of vinegar

4. Create a vortex by gently stirring a spoon

5. Drop the egg in the centre

6. Poach for 3-4 minutes depending on how runny you like your yolk

7. Whilst the egg is poaching, take the whole- meal bread and toast

8. Mash half the avocado onto the toast

9. Wash the kale and add

10. Layer the poached egg on top

11. Pinch the egg to allow the yolk to drizzle out

12. Sprinkle some chilli flakes to taste

13. Enjoy!
